Cheefarcuut 400-Grit Diamond Stone: Restoring a Dull Aogami 2 Bunka Knife

Cheefarcuut 400-Grit Diamond Stone: Restoring a Dull Aogami 2 Bunka Knife

EdgeWorks Knife Studio is a sharpening-focused YouTube channel that does exactly the kind of testing forum knife nerds care about: freehand work on real kitchen knives, microscope shots of the bevel, and honest commentary on how stones actually feel in use.

In this video, EdgeWorks Knife Studio puts the Cheefarcuut 400-grit vitrified diamond stone to the test, using it to restore a very dull 63 HRC Aogami 2 Bunka knife to a sharp, paper-cutting edge. The results? The stone shows impressive cutting speed, and the knife is restored to sharpness with just a few strokes.

Video Review

Stone and Setup

  • Stone description: The Cheefarcuut 400-grit vitrified/sintered diamond stone has 5 mm of diamond abrasive bonded to an aluminum base. The stone is designed to refresh itself as it wears due to the diamond being throughout the thickness.
  • Design purpose: It is intended for fast cutting and quick edge restoration on hard steels, making it an ideal tool for sharpening tasks like this one.
  • Family of stones: The Cheefarcuut 400 is part of the same family as the HK Knife Works and FSK vitrified diamond stones, known for their fast cutting abilities.

Sharpening Performance

  • Initial dullness: The Aogami 2 Bunka knife starts off significantly dull, but the Cheefarcuut 400 quickly raises a full burr along almost the entire edge after just a short series of strokes.
  • Cutting speed: The stone demonstrates extremely high cutting speed, efficiently restoring the edge with relatively few strokes.
  • Resulting edge: After deburring and a bit of light refinement, the knife is able to cleanly cut through thin, flexible Uline catalog paper, making it sharp enough for use or ready to move on to finer grits.

Technique and Deburring

  • Sharpening technique: The sharpener uses light pressure, beginning with long strokes to raise a burr, followed by shorter, focused strokes to refine the edge. The sharpener alternates between edge-leading and very light edge-trailing passes to deburr effectively.
  • Final refinement: The edge is then smoothed and polished further with a large leather strop pre-loaded with 0.25 micron diamond compound to remove any remaining burr and enhance the sharpness.
