Follow this step-by-step guide to get a sharp, clean edge using your Cheefarcut vitrified diamond sharpening stone and the included leather strop.
1. Set your angle
Use the included angle reference wedge to lock in a stable sharpening angle before you start.
- Choose an angle of about 15–18°, depending on your knife and how you use it.
- Place the angle wedge flat on the stone.
- Rest the blade against the wedge so the spine touches it and the edge is lifted at the correct angle.
- Slide the wedge away and keep that same angle with your hand as you begin sharpening.
Goal: a consistent angle from heel to tip matters more than the exact number.
2. Make controlled sharpening strokes
Once your angle is set, focus on slow and steady movement along the stone.
- Use slow, controlled push-and-pull strokes along the stone.
- Keep your chosen angle as steady as possible throughout the whole stroke.
- Apply light pressure, especially if you’re a beginner – let the stone do the work rather than forcing the edge into it.
- Cover the entire edge from heel to tip so you don’t over-sharpen just one area.
Priority: consistency and control first, speed later.
3. Sharpen until you form a burr
A burr tells you that the two sides of the bevel have met and you’ve reached the apex.
- Stay on the first side of the blade until you raise a burr along the full length of the edge.
- Check for a burr by gently feeling across (not along) the edge from spine toward the edge. Never slide your finger along the edge.
- When the burr runs from heel to tip, flip the knife to the other side.
- Repeat the same strokes and light pressure until a burr forms along the full edge on the second side.
4. Refine the edge on the leather strop
After sharpening on the stone, use the leather strop to remove the remaining burr and clean up the edge.
- Use edge-trailing strokes only: always pull the knife so the edge is moving away from the direction of travel.
- Make sure the pressure is directed toward the spine, not into the cutting edge, to avoid cutting into the leather.
- Use lighter pressure than on the stone – stropping is for refining, not heavy metal removal.
- Make several gentle passes on each side, keeping the angle similar to your sharpening angle.
Think of stropping as “clean up and refine” rather than “grind more steel.”
5. Safety and support
- On the leather, never push the edge into the strop as you would on a stone – this can cut deeply into the leather surface.
- Keep your fingers well clear of the edge at all times and move slowly when checking for a burr.
